Ingredients
For Jollof Rice:
- 3 cups long-grain rice (washed)
- 1 red bell pepper + 2 tomatoes + 1 onion + 2 scotch bonnets (blended)
- 1/4 cup vegetable oil
- 2 tbsp tomato paste
- 2 cups chicken stock
- 1 tsp thyme, 1 tsp curry, 2 bay leaves
- Salt and seasoning cubes to taste
For Air-Fried Turkey:
- 1 kg turkey wings or drumsticks
- 1 tsp paprika, 1 tsp garlic powder, 1 tsp ginger, salt, and black pepper
- 1 tbsp oil or spray
For Vegetable Salad
- A small ball of Cabbage , Carrots , Cumcumber,
- Sweet corn, Green peas (Canned), Kidney beans ( Canned)
- Boiled Eggs
- Mayonnaise
For Fried Plantains:
- 2 ripe plantains (sliced diagonally)
- A pinch of salt
- Vegetable oil for frying (or air-fry for a lighter option)
🔥 Directions
Step 1: Season and Cook Your Turkey
Rub turkey pieces with the spices and a drizzle of oil. Air-fry at 375°F (190°C) for about 25–30 minutes, turning halfway through, until golden and crisp.
Step 2: Cook the Jollof Rice
Place a pot on fire , Pour in vegetable oil and allow to heat for a few seconds. Add your finely chopped onions and allow to fry for a few seconds (color turn slightly to brown) then Sauté tomato paste in the oil for 2–3 minutes. Add your blended mix and fry until the oil separates. Stir in spices, bay leaves, and stock. Add rice, reduce heat, cover tightly, and let it steam until cooked through. If you enjoy onions in your meals, you can add some finely chopped onions to your rice, stir , cover for a minute before taking your jollof rice off the heat.
Step 4 : Vegetable Salad
Wash all vegetables and finely chop them into a size you can comfortably fit into your mouth. Strain your canned sweet corn, kidney beans and green peas into a seive and rinse of with hot water and set it aside. Get a bowl and pour in your finely chopped vegetables, everything in your strainer and mix together. Add your mayonnaise, stir until it is fully incorporated and your vitamin packed salad is ready
Step 3: Fry or Air-Fry Your Plantains
Sprinkle with salt, then fry in shallow oil or pop them in the air fryer until golden. You can fry a ball of finely chopped tomato, some pepper and onions for a minuted. Add a bit of seasoning and mix with the air fried turkey. This will make your air fried turkey look more attractive.
